What you will need:

3 oz package strawberry jello 1 package white cake mix Oil, eggs, and water (as specified on the cake mix container) 1 cup boiling water 12 oz whipped cream 12 fresh strawberries

How to make it:

Make the cake, following the instructions on the package. Bake the cake for about forty minutes or until it is done at 350 degrees F. Let it cool in the cake pan for fifteen minutes, and then let it finish cooling on a wire rack. Poke holes all over the cake using a fork.

Dissolve the strawberry jello in the boiling water and pour this mixture all over the cake. You should set the wire rack over a rimmed baking sheet to catch any jello drips. Chill the strawberry poke cake for four hours or until the jello has set. Decorate the cake with whipped cream and fresh strawberries.

Nailing Jello To a Tree and Other Unproductive Endeavors

As I was thinking about a topic for this month's column, I was struck by the fact that a woman who taught me a lot about life and probably helped shape many of my perspectives, passed away three years ago last week...my Aunt Mary.

A very important person in my life, my Aunt Mary, who has passed on, taught me a lot as a kid that all of us should embrace in our quest for happiness, sanity and productivity.

It's fitting that her wisdom would appear in my management writing since my business philosophy of Do business on your own terms! (R) and family first was heavily influenced by her. She raised 5 good kids and was able to maintain her humor, sanity and a positive outlook on life even during her last few years when she was quite sick.

Not one to waste time, or mince words, she was always ready with comfort, advice or admonishment when necessary. When the kids would get on her nerves and she needed a short break, she was famous for assigning the task, "Go nail Jello(R) to a tree or something, will you!" Clearly, this is a task that is pointless, fruitless and a visual that is just plain funny.

On the serious side though, how many of us can't find the humor in things, can't figure out a way to take a break or can't overcome everyday stress because we are spending way too much of our time focused on pointless and fruitless things? Is it because of some sense of misguided responsibility that we HAVE to do these things? Do we do them because we have allowed someone else to override our priorities with theirs? Or is it because we simply haven't stopped to think about and separate what's important from all of what I call, LifeClutter(c)?

Make yourself a promise that for one week you will force yourself to look at all of the things you 'have to do' every day and ask yourself, is this productive or pointless? Am I doing this because I truly have to or because it's a habit I can't break? Is it LifeClutter(c)?

One of my favorite questions is, "What could happen if I don't do this?" Based on the answer my follow-up question is, "Do I care about that outcome?" If the outcome isn't a problem, then I have the freedom to decide if I'm going to take action or not...ahh. Cleaning out the LifeClutter(c).

If you actually make time to do this exercise and examine how you spend your time, you will quickly find that just like that closet full of clothes you'll never wear again, there are a lot of things that can be given away (delegated) or simply discarded that will free up space for the good stuff.

Although nailing Jello(R) to a tree might be an amusing time waster, and it should probably become a YouTube video, I suggest that there are a lot of other unproductive time wasters in each of our lives that deserve to be cleaned out and thrown away so that we can fill life with the good stuff.

Fun Jello Poke Cake

If you want a really easy cake to make for a potluck or you want something fun to make with your kids, take a look at Jello Poke Cake. What You Need

How to Make It

Combine the cake mix, pudding mix, eggs, water, and oil in a large bowl and mix well. Pour the mixture into a greased and floured 13 x 9 inch baking pan. Bake at 350 degrees F for 40 to 45 minutes. Do not underbake the cake. Let the finished cake cool in the pan for 15 minutes.

Lemon Jell-O, 1 cup boiling water, 1 pint vanilla ice cream, 1 (3 oz) pkg. blueberry Jell-O, 1 cup boiling water, 1/4 cup sugar, 1/2 cup cold water, and 1 1/2 cups fresh or frozen blueberries.

Start with the red layer for your frozen patriotic treat. Mix up the strawberry Jell-O according to instructions on the box and using the 1 1/3 cups boiling water. Add fruit to the still warm mixture. Let cool to a little above room temperature. Pour the mixture into a bundt pan. Place into fridge to let chill until set while you make the other Jell-os.

Begin the white layer of Jell-O by dumping the lemon Jell-O into 1 1/3 cups boiling water. Stir until smooth. Blend in the vanilla ice cream and blend until mixture is smooth. Chill at room temperature until thickened. Slowly spoon or pour the white layer of the patriotic Jell-O mold over the red layer in the bundt pan. Chill in fridge as before.

The last layer of the patriotic Jell-O mold begins by mixing the blueberry Jell-O mix with sugar in one cup boiling water. Add cold water. Let sit at room temperature until thickened. Stir in blueberries. Spoon the cooled mixture over top the white layer of Jell-O in the bundt pan. Let the patriotic mold chill overnight. Remove from mold and serve at your party.

Cheese can be traced back about four thousand years, since cheese molds dating to that time have been found. It is thought that cheesecake was served to the athletes in the first Olympic Games in 776 BC.

The Romans conquered Greece and found out about this delicious dish. They then brought cheesecake from Greece to other parts of Europe but it did not appear in the United States until European immigrants arrived, bringing cheesecake recipes.

How to Make Raspberry Jello Cheesecake

What you will need:
3 oz package raspberry jello Handful fresh or thawed raspberries 1 1/4 cups white sugar 1 cup boiling water 1/4 cup melted butter 2 teaspoons vanilla essence 1 1/4 cup graham cracker crumbs 1 big can well chilled Carnation milk 8 oz cream cheese
How to make it:

Combine the graham cracker crumbs with the butter and 1/4 cup of the sugar and press this mixture on to the base of a glass pie plate. Chill it in the refrigerator.

Dissolve the jello in the boiling water and stir well. Combine the cream cheese, the rest of the sugar and the vanilla in a mixer and beat until it is smooth. Whip the Carnation milk in another bowl and add the cooled jello mixture.

Add the cream cheese, sugar, and vanilla mixture to the whipped milk and jello and stir well. Add the raspberries. Pour the jello mixture on top of the graham crumb crust. Chill for at least four hours, and then serve.

Jello Cake Recipe: Make A Scrumptious Pina Colada Rum Cake

Are you one of those people who enjoy making and eating different flavors of pudding or gelatin? Or maybe, your children enjoy eating jello and all the different snacks you can make with it.

Children and adults alike have been fascinated with both pudding and gelatin desserts since their moms first started making them. Long ago a cook, most often the mother would have to stand over a hot stove all day to prepare flavored gelatins and delicious puddings for their families. Luckily, today we have the convenience of using instant puddings and gelatins to make all those wonderful snacks and desserts.

If you have never made a jello cake recipe you are in for a real treat. For instance you can make a scrumptious pina colada rum cake while using coconut cream and vanilla flavored instant puddings. You use it in the cake batter which you can make with a mix and then you add some more pudding while making the filling and frosting for this cake. You can decorate it by sprinkling it with flaked coconut and dress the cake up even more; you might want to top it with some maraschino cherries before serving.

Recipe for Pina Colada Rum Cake

You can store any left over cake in the refrigerator in a sealed container with a tight fitting lid.

What You Need

1/3 cup dark rum 1 package white cake mix 4 eggs ½ cup water 1 cup oil 1 package coconut cream jello instant pudding 4 ounce 1 cup flaked coconut 1 cup crushed pineapple and juice 1 package vanilla jello instant pudding 4 ounce 1/3 cup dark rum 1 container thawed whipped topping

How to Make It

Prepare two 9 inch cake pans by lightly greasing and flouring them and then set aside until needed.

Preheat oven to 350 degrees Fahrenheit.

Using a large mixing bowl and an electric mixer on medium speed, you will add the dark rum, white cake mix, eggs, water, oil and coconut cream jello instant pudding and then beat to combine. Beat mixture for about 4 minutes and then pour evenly into the two prepared 9 inch cake pans. Place in the preheated oven to bake for about 25 to 30 minutes or until the cake is done. Do not under bake the cake, bake until the middle of the cake springs back after lightly pressing it.

After baking the cake, remove it from the oven and allow it to cool for about 15 minutes and then turn the cakes out onto a rack to cool.

Mix the flaked coconut, crushed pineapple and juice, vanilla instant pudding and the remaining 1/3 cup dark rum. Fold in the thawed whipped topping until well blended.

Use this mixture for the cake filling and then use the remaining mixture to frost the entire cake. Sprinkle with coconut if you like for an old fashion yet beautiful presentation. Place in the refrigerator overnight to chill or for at least 3 to 4 hours before cutting and serving.

Lemon-Lime Cottage Cheese Salad

1 (3 oz.) pkg. lemon jello

1 (3 oz.) pkg. lime jello

1 c. hot water

1 (15 oz.) can crushed pineapple

1 c. evaporated milk

1 c. Miracle Whip or mayonnaise

1 pint cottage cheese

1 c. chopped nuts

Dissolve jello in hot water. Add salad dressing, to which milk
has been stirred in a little at a time, in separate bowl, before
adding to jello. Add cottage cheese, pineapple and nuts. Pour
into mold and let set in refrigerator several hours.

Christmas Salad

6-oz. cream cheese

1 c. mayonnaise

1 c. heavy cream, whipped

1/2 c. red maraschino cherries, cut in half

1/2 c. green maraschino cherries, cut in half

1 (15 oz.) can crushed pineapple, drained

1 c. miniature marshmallows

Combine cream cheese and mayonnaise; blend well. Add fruit. Mix
well and fold in whipped cream. Freeze. Thaw about 15 minutes
before cutting into servings. Can be frozen in one dish or
thicker or thinner servings, or in cupcake pans.

Cinnamon Candy Salad

1 (6 oz.) pkg. lemon or orange jello

1/2 c. cinnamon red hots

1 3/4 c. hot water

1 small pkg. cream cheese

1/2 c. heavy cream

1/4 tsp. salt

1 large Red Delicious apple, grated

Boil together water and cinnamon red hots until candy is
completely dissolved. Mix syrup with jello, add apple. Blend
cream cheese, cream, and salt. Stir into jello and allow to stand
overnight in refrigerator.

Desserts - How to Make a Jello Cream Cake

This is a recipe my sister-in-law used to make for every family get together. Since everyone loved it, she just always brought it. With everyone's kids grown and schedules so different, we haven't seen this cake in many years.

When I recently dug the recipe out of my recipe box, my daughter looked at it and said, "Mom I don't remember it, but a cake and jello all in one?" The answer is yes, this is jello on top of a crust. It comes out wonderfully. My daughter wanted it made immediately.

Here is a list of the ingredients used in the recipe:

½ cup butter (you can also use a lower calorie margarine for this recipe)
½ cup brown sugar
1 cup flour
½ cup chopped walnuts
1 small package lemon jello
1 large package lime jello
8 ounces of cream cheese, softened
2 cups whipping cream, whipped
¾ cup white sugar

You start by making the crust. Cream together the butter and brown sugar. Mix in the flour and walnuts. Mix until well mixed. This will form your crust. Press the crust into a 9x13 casserole dish. Bake at 375 degrees 8- 10 minutes. Do not overcook.

You now create your first jello layer. Dissolve the lemon jello in one cup of boiling water. Dissolve completely and then allow to cool. Mix together the cream cheese and white sugar. Then add the whipped cream. Mix well. Add the lemon jello to the mixture and stir. Pour over the cooled crust and refrigerate. You need this first layer to set.

Once set, create your second layer. Dissolve the lime jello in three cups of boiling water. Allow to cool and then pour over the lemon jello layer. Return to the refrigerator until completely set. You can now cut it into squares and serve. We like to top it with a small scoop of whipped cream.

Once you learn how to make this recipe, you can create different color combinations for holidays. For example, during Valentines Day you might consider either two red layers or making the first layer with non-colored jello and your second layer with red. For Christmas, you can make one layer red and one green. For Independence Day, try one blue layer and one red layer. Your crust is light brown, so your cake looks patriotic.

As you choose colors, consider taste combinations. For example strawberry and raspberry jello are close in color but very different tastes. Also, we use sugar free jello when making this recipe as there is plenty of other sugar in the cake.

Try the cake and see if you like it as is. If you don't like the walnuts, try using other types of nuts.

What You Need

How to Make It

Preheat the oven to 400 degrees Fahrenheit.

Add the water and the butter or margarine into a small saucepan. Bring to a boil and then remove from heat. Warm a large mixing bowl and after boiling the water and butter or margarine, pour this hot mixture into the large mixing bowl. Gradually add the flour and stir until the mixture forms a ball. Add the eggs one at a time and beat thoroughly. Mix until the dough becomes very stiff.

Drop this mixture by the teaspoon full onto a baking pan or cookie sheet while forming circles on the pan or laying the dough out in strips on the pan to bake. Place in the preheated oven to bake for about 20 minutes or until done. After baking turn off the oven but do not open the door. Allow the eclairs to stand in the oven for about 1 to 2 hours before removing them from the oven.

To prepare the filling for the eclairs you will add the instant pudding and milk to a large mixing bowl and then mix well. Fold in the whipped topping and the vanilla flavoring. After cooling the eclairs, slice the éclair in half and then generously fill the bottom layer with the creamy pudding mixture. Replace the tops and set aside until needed.

To prepare the chocolate sauce for the eclairs you will melt the 1/2 cup butter or margarine and chocolate chips together and blend well. Gradually add the evaporated milk and powdered sugar and mix well. Bring the mixture to a boil while continually stirring to prevent sticking and burning. Boil and stir for about 8 minutes and then remove from heat. Stir in the remaining vanilla flavoring. Drizzle this chocolate sauce over the tops of the prepared eclairs and then serve.

Try coffee jello. It's quick and very simple to make. It only takes about fifteen minutes to put together and most of that time is waiting for it to thicken. It also doesn't require heating oven up, so it's perfect for the summer, but you can enjoy it year round.

What you'll need:

Two 1/4 ounces of plain gelatin. It's in the grocery aisle with the jello, probably in a plain looking box.

A 1/2 cup of cold coffee. I used a flavored coffee, but really you can use any coffee that you like.

3 cups of hot coffee.

A 1/2 cup of sugar. More or less depending on how sweet you like it.

1 pinch of salt

How to make it:

In a large bowl or I used a small, narrow roasting pan, mix the gelatin and iced coffee.

Let it set for ten minutes for it to thicken.

Add the hot coffee, sugar and salt. Stir it until sugar is completely dissolved.

You can pour it into individual serving dishes or keep it in the roasting pan. Put it in the refrigerator until it sets. I noticed that it took sightly longer than normal jello to set. In my refrigerator, it took about three hours, so if you can make before you start cooking your dinner and by the time you're done eating dinner, it'll be ready!

And that's it. When you serve it, you add whipped cream. I also recommend trying it with chocolate or caramel syrup. Also, you can try adding bananas, strawberries, raspberries or anything else you'd like.

How To Make It

Pour the contents of the Lemon Jello packet into a medium sized plastic or glass bowl. Slowly add the hot coffee, stirring with a spoon until the jello is dissolved. Add the cold water, slowly stirring to blend the coffee/lemon jello mixture. Pour into six individual dessert cups, or to make it a special dessert, pour into six stemware glasses. Refrigerate for at least four hours.

Just before serving the dessert, shake the can of whipping cream and put it on top of the coffee jello in each dessert cup. It can be in a swirl or layer. Shake some of the chocolate sprinkles on the whipping cream.

This dessert can also be made by using one of the sugar-free Jello gelatin products. Instead of whipping cream from the can, thaw and use a bowl of the frozen light whipped dessert toppings.
